It’s my first summer Whole30 (we also did it once in January) and I’ve been focusing on incorporating more veggies into the diet. Can you tell?
The goal here is more recipes and ideas that are good for any kind of eater, not just those doing Whole30. I’ve been aiming for strategies that anyone (mostly myself) can employ anytime and all the time. More veggies is never a bad thing.
Here’s what I’ve (re)learned this time around the Whole30 train: I like to eat veggies when they are prepared ahead of time and I don’t have to do a single thing to prepare them for my mouth. NOT A THING.
Even more, I like them small and combine-able (new word!). Enter: Everyday Vegetable Confetti.
What the heck is Everyday Vegetable Confetti?
Welcome to today’s lesson: Everyday Vegetable Confetti. It’s vegetables diced up as small as you comfortably can to look like confetti! Bonus: You can use it everyday, on anything you want.
What’s in the Vegetable Confetti?
Four simple ingredients, all raw vegetables:
- one red bell pepper
- one green bell pepper
- one large carrot
- a small bunch of parsley
How do you make the Vegetable Confetti?
The most important thing about making vegetable confetti is dicing your veggies into small, similar sized pieces. This is a really good recipe to practice your knife skills!
Since I’m not a trained chef and I don’t want to use the wrong words, here’s a good article on how to cut carrots. We’re going for finely diced or brunoise if you’re feeling super fancy.
Same with the bell peppers – we want a small dice just like the carrots. I like this guide on how to cut a bell pepper from Epicurious with pictures.
After everything is diced and chopped, just mix it all together in a bowl. That’s it.
What do I use the Vegetable Confetti for?
The options are endless here people!! I’m going to break it down into categories to make it simpler.
Side salads and dinner salads (any salad really)
A great way to use this vegetable confetti mixture on the daily, just like me! Take ANY bowl of lettuce from boring to super exciting instantly!! During this Whole30 summer edition, we’ve been eating a lot of salad (mostly a mix of kale/homegrown romaine). Well, greens are boring as can be. Top your salad with a couple spoonfuls of this?? BOOM. Zero to salad hero. This is my number one use of veggie confetti!!
Stir fry, tacos, anything with cooked veggies
This evening, I tossed a handful of vegetable confetti into our “egg roll in a bowl” stir fry meal. Why? Because veggies! And color! And because that’s the freedom you have with vegetable confetti. Use it for anything you want.
As an app or snack served over cream cheese
Serve over a brick of cream cheese with some crackers for a 5 minute app that will please any. Or turn it into snack packs for yourself. Eat as many veggies as you want and do what you want!!
How long does the Vegetable Confetti last?
This recipe is best made with the freshest possible vegetables! This vegetable confetti will last up to 7 days in an airtight container in the fridge if your vegetables were as fresh as possible.

This Everyday Vegetable Confetti is a quick and easy way to toss extra veggies on any salad, or over any protein! Made with only four ingredients – red and green bell peppers, carrots and parsley. Meal prep this simple mixture for a colorful addition of raw veggies to any meal during the week.
- 1 large red bell pepper, finely diced
- 1 large green bell pepper, finely diced
- 1 large carrot, finely diced
- 1 small bunch of parsley, chopped
- Combine all ingredients in a medium bowl and mix until combined. Store in an airtight container in the fridge for up to 7 days. Sprinkle over salads, on tacos, over protein, on pizza, into stir fry, and more.
