Finally a ground turkey recipe that has nothing to do with tacos! This Smokey Green Bean Turkey Skillet has an amazing smokey flavor and is versatile enough to portion over rice, quinoa or pasta. Perfect for meal prepping!

Ingredients in the Smoky Green Bean Turkey Skillet

The South African Smoke Seasoning Blend is from Trader Joe’s (surprise surprise). The only ingredients listed are paprika, sea salt, garlic and basil. That’s it. It’s hard to describe the flavor combination other than ‘smokey goodness’ in sprinkle form.

If you don’t have access to this seasoning blend, use an equal combo of smoked paprika, sea salt, garlic powder, and a dash of dried basil.

Fresh green beans are a must-do for this recipe. Hopefully they’re availableย near you. If you live around Washington, here’s a handy vegetable seasonality chart that tells you what’s in season. Canned green beans just don’t stay crisp or bright, but frozen might work for this recipe too!

I love this recipe for lunch or dinner, but it’s especially easy for meal prepping. Before starting the turkey, I get some quinoa or rice going in the rice cooker.

When both are done, I split the quinoa or rice evenly between four 4-cup Pyrex bowls. Then top each bowl of quinoa with Smokey Green Bean Turkey Skillet, and you’re off. Add some cheese if you feel like it.

Store this meal prep meal in airtight containers with lids in the refrigerator for up to 4 days for best quality.

How to freeze prepared Smokey Green Bean Turkey Skillet:

You can freeze individual portions of this recipe in freezer safe containers. Remove from the freezer the night before eating and then reheat normally, or defrost slowly in the microwave before eating.

How to reheat prepared Smokey Green Bean Turkey Skillet:

Smokey Green Bean Turkey Skillet

Finally a ground turkey recipe that has nothing to do with tacos! This Smokey Green Bean Turkey Skillet has an amazing smokey flavor but is versatile enough to portion over rice, quinoa or pasta. Perfect for meal prepping!

Ingredients

  • 1 tablespoon olive oil (or avo oil)
  • 1 pound lean ground turkey
  • 1/2 teaspoon garlic, minced
  • 1 red bell pepper, diced
  • 1/2 yellow onion, diced
  • 2 cups fresh green beans, ends removed, cut into 1 or 2 inch lengths (about 8 oz)
  • 2 teaspoons smoke seasoning blendย (see note for alternatives)
  • 3/4 cup chipotle salsa (any salsa will work)
  • pinch of salt
  • optional: serve with rice, quinoa, pasta, greens

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and break apart with a spatula. Add a pinch of salt. Cook until meat is nearly cooked through, about 4-5 minutes. Remove excess liquid from pan.
  2. Push turkey meat to one side of the skillet. Add red pepper, onion, green beans, and garlic. Mix meat and vegetables together and saute for 3-4 more minutes, stirring occasionally.
  3. Add seasoning and salsa. Mix ingredients in skillet until evenly distributed. Reduce heat to low, and simmer for 6-7 minutes or until green beans are tender, stirring occasionally.
  4. Serve over rice, quinoa, or pasta! Store in an airtight container in the refrigerator for up to 4 days.

Notes

I use the Smoke Seasoning Blend Grinder from Trader Joe’s. This is a blend of paprika flakes, sea salt, garlic, and basil. If you want to make this seasoning at home, try 1 tsp paprika, 1/2 tsp garlic powder, 1/2 tsp of dried basil, and a pinch of salt.
