My mom got me some super adorable small sized loaf pans for Christmas, and I’ve been making the cutest mini meals! When I opened up the present, my first thought was: INDIVIDUAL PORTIONS.
Now with Whole30 going on right now, I skipped over thinking about mini desserts. Just don’t even go there.
Where I did start was mini meatloaves – cute (somehow?), but still a work in progress. These Broccoli Bacon Mini Frittatas, however. Great for Whole30, perfectly acceptable way to use my new mini loaf pans, and delicious to make-ahead!
What are the ingredients in these Broccoli Bacon Mini Frittatas?
The great thing about these Broccoli Bacon Mini Frittatas is that you can customize the add-in ingredients and make them your own. Leave out what you don’t like, add in what you have on hand!
Here are the ingredients in my Broccoli Bacon Mini Frittatas:
- eggs – Required for this protein packed breakfast
- coconut cream – Used in place of heavy cream and makes the frittata a little fluffier. No, it doesn’t taste like coconut!
- garlic powder, onion powder, oregano – Spices are life. Use them!
- bacon – Adds flavor, protein, and bacon magic. Also completely covers up any traces of coconut taste.
- broccoli – Because veggies! I’m not very good at getting veggies in for breakfast, but this is a great way.
QQ: What’s the difference between a quiche and a frittata?
There are two main differences between a frittata and a quiche. First, quiches are usually made with a large amount of dairy (up to 2 parts egg to 1 part dairy), while frittatas tend to have minimal or no dairy involved.
Second, quiches *usually* have a crust, while frittatas never have a crust. However, crustless quiches are a thing, so that’s not really a qualifying factor. Read more at The Kitchn!
Where do I find no sugar added bacon?
Did you know that almost all bacon sold at the store has sugar in it? Yes! Did you know sugar is NOT necessary for delicious tasting bacon? Also true.
So instead, I prefer to get my bacon from ButcherBox (affiliate link), my monthly meat delivery service.
When I’ve run out of my monthly bacon supply and just need more bacon, I’ll grab some at Whole Foods, where I can get the same quality bacon as I get from Butcherbox.

What mini loaf pans do you use?
Last Christmas, my mom got me some super cute mini loaf pans, and I set out on mini individual portioned food making journey.
The measurements of my mini loaf pans are approximately 6 inches L x 3.25 inches W x 2.25 inches H. The mini loaf pans came in a set of four.
Unfortunately, I can’t remember what brand they are, and they do not say on the pans. Oops!
If I were go out and buy new loaf mini pans right now, I would recommend this set of mini loaf pans (affiliate link!), which have been recommended by America’s Test Kitchen. I would also be willing to try this set of silicone mini loaf pans (affiliate link).
I don’t have mini loaf pans. Can I still make these frittatas?
Yes! You can make these frittatas with other baking equipment. The bake time will vary depending on the dimensions and material of your cooking pan.
For muffin pan sized mini frittatas, follow the same instructions but cook for 8-12 minutes.
For a normal (8.5 x 4.5 inch) loaf pan size frittata, follow the same instructions but cook for 25-35 minutes.
How can I turn these mini frittatas into meal prep meals?
The cutest part about these mini frittatas? The food that comes out is shaped perfectly to fit into my 3 compartment glass meal prep containers (affiliate link!). Easy!
For meal prep, I like to fill the other smaller containers with things like fresh fruit or berries, plus some Basic Oven Breakfast Potatoes.
I love potatoes so much that I don’t mind any loss of crisp that happens overnight. That’s what’s pictured in the meal prep containers below!
How long do these mini frittatas last?
These Broccoli Bacon Mini Frittatas will last up to four days in the refrigerator. Keep in an airtight sealed containers.
How do you reheat the mini frittatas?
Reheat in the microwave on High for about 60 seconds, or until hot and steamy. If reheating individually, wrap the frittata in a paper towel while microwaving.
If reheating as part of a meal, remove any berries or raw produce from the container, then microwave with the lid on for 60-90 seconds until entire contents are hot.
Are these Broccoli Bacon Mini Frittatas freezer friendly?
Yes, you can freeze these Broccoli Bacon Mini Frittatas. Freeze in airtight sealed containers.
I would letting them thaw overnight in the fridge before microwaving, for best texture.

These Broccoli Bacon Mini Frittatas are a simple but delicious addition to your make-ahead breakfast rotation. Directions included for mini loaf pans, large loaf pans, and muffin tins. Whole30, paleo, low-carb, dairy-free, easy to make, good food!
Ingredients
- 8 large eggs
- 2 tablespoons coconut cream (OR heavy cream if not paleo/Whole30)
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon each salt & pepper
- 6 pieces of no sugar added bacon, cooked and chopped into bits
- 1 cup broccoli florets, roughly chopped
Instructions
- Prep: Preheat the oven to 350F. Grease four (6 x 3.5 inch) mini loaf pans using bacon grease or cooking spray. Divide chopped broccoli and bacon evenly between each of the four loaf pans. Blend the eggs, cream, and spices together in a blender or Nutribullet for best frittata texture. Pour the eggs mixture over the bacon and broccoli, dividing it evenly between the four loaf pans.
- Cook: Bake the mini frittatas for 12-15 minutes, removing from the oven as soon as the centers are no longer jiggly (if these are for meal prep, just barely undercooked is okay – they will cook a little more when reheated). For muffin pan sized mini frittatas, follow the same instructions but cook for 8-12 minutes. For a normal (8.5 x 4.5 inch) loaf pan size frittata, follow the same instructions but cook for 25-35 minutes. Keep in the refrigerator for up to 4 days.
- Reheat: Reheat in the microwave on High for about 60 seconds, or until hot and steamy. If reheating individually, wrap the frittata in a paper towel while microwaving.
