I’ve got a thing for this Chipotle Grilled Chicken. It tastes like it’s actually from Chipotle, but you can easily whip it up at home with just a few simple ingredients. I originally posted this Homemade Chipotle Grilled Chicken recipe last year, when a really nice reddit user shared it online and gave me permission to post it on Project Meal Plan.
Okay. Obviously, I would not keep going on about the flavor and tenderness of this chicken if it wasn’t true, right? Right. But here’s something that makes it way better. I absolutely recommend using an internal thermometer to measure the temperature of your chicken as it cooks. We bought this one at Home Depot. My favorite feature – the bluetooth connection to your phone. The app alerts you when your food item is within 10 degrees of it’s final temperature so you can have a little notice before pulling perfectly cooked chicken breasts off the grill.
And when I say perfectly cooked, I mean it. If you take those babies off right at 165 degrees, it means you will no longer be guessing when things are done. You’ll know. And it will taste amazing.
The two sides chosen for this meal prep are zucchini and seasoned black beans. It’s a combo revival from a few years back. For some reason, the two just go together. It did not hurt that I had fresh zucchinis from the garden – the first NOT used for brownies! Add in that perfectly cooked chipotle grilled chicken breast I was talking about earlier and BAM. Certified awesome meal prep combo.
The seasoned black beans are also super easy to toss together – cooked onion and pepper, one can of black beans and some casual spices. Done! Enjoy this summer time meal prep!

Meal Prep Chipotle Grilled Chicken with Seasoned Black Beans and Zucchini
Meal Prep Chipotle Grilled Chicken with Seasoned Black Beans – Perfect grilled chicken with seasoned black beans and zucchini. Summer meal prep happiness!
Ingredients
For the chicken:
- 1 1/2 pounds boneless skinless chicken breast, fresh or thawed
- 1 7-oz can chipotles in adobo sauce
- 1 tablespoon dried oregano
- 1/2 tablespoon cumin
- 1 tablespoon minced garlic
- 1/2 tablespoon salt
For the zucchini:
- 14–16 ounces zucchini, cut into spears (about 2–3 medium zucchini)
- 1 tablespoon dried oregano
- 1/2 tablespoon salt
- 1 tablespoon avocado oil (or EVOO)
For the black beans:
- 1 tablespoon avocado oil (or EVOO)
- 1/4 yellow onion, finely diced
- 1/2 green pepper, finely diced
- 1 teaspoon minced garlic (1 clove)
- 1 15-oz can black beans
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper
Instructions
For the chicken:
- Tenderize your chicken breasts with a meat tenderizer or pounder.
- In a bowl, place the chipotle peppers in adobo sauce and use a fork to crush the chipotle peppers a little bit. Addย salt, oregano, cumin, and minced garlic into peppers and sauce. Mix well.
- Place all items in a gallon size Ziploc bag. Double bag to avoid leakage if you want. Let chicken marinate for 12-48 hours.
- Grilling is the best method of cooking this chicken. Let some sauce drip off before cooking on a hot grill for 30-45 minutes, flipping halfway through, until the internal temperature reaches 165 degrees.
For the zucchini:
- Mix oregano, salt and oil in a small bowl. Drizzle or use a pastry brush to cover all spears with oil and spices.
- Grill zucchini for about 3 minutes on each side, or until tender with grill marks.
For the black beans:
- In a small sauce pan, heat oil over medium heat. Add onion, pepper, garlic and a pinch of salt. Cook for about 5 minutes, stirring occasionally, or until the onions are translucent.
- Add black beans, cumin and cayenne pepper. Stir and let simmer for 6-7 minutes.
Use a bluetooth internal thermometer so you can go cook the beans while the chicken is on the grill! Cook the zucchini before or after the chicken! Disperse chicken, zucchini, and black beans between your favorite airtight meal prep bowls. Store in the fridge and eat within 4 days!
