Banana bread with cinnamon and chocolate chips is just too good for me to resist. But what do I do if I only have one banana, or even just a half? This Air Fryer Banana Oatmeal Cookie For One is what I do!

It makes a semi-large cookie for one person, or split it in half for basically a normal cookie amount for two. However, it’s not that huge, and there’s banana and oatmeal in it, so that means you can totally eat it for breakfast.

Can you cook a cookie in an air fryer?

The answer is yes. The most important thing to remember is you need to keep the air fryer temperature low enough so that the outside of the cookie doesn’t burn before the inside is cooked. The cookie should come out with a slightly crisp outside and a soft, chewy inside.

I’ve found that the optimal air fryer temperature for making cookies is between 300F and 320F, depending on the thickness of your dough and type of cookie. Any higher, and the cookie turns out a little more browned that I prefer.

This recipe honestly turned out much better than I expected. Definitely look for more air fryer cookie recipes from me in the future. In the meantime, I’m positive you’ll enjoy this Air Fryer Banana Oatmeal Cookie For One!

What are the ingredients in this Air Fryer Banana Oatmeal Cookie?

Using just small amounts of pantry ingredients plus half a banana, this recipe could not be easier. Hereโ€™s a list of what I used in this recipe and why it’s important, in case you need it:

  • banana – Go for the ripest banana possible, as that will add more sweetness to the cookie. The banana also helps keep the cookie moist.
  • brown sugar – This is the main sweetener for the recipe. I love the deeper taste of molasses with the oatmeal compared to white sugar. It also helps keep the cookie soft, thick and delicious.
  • olive oil – A little bit of oil (you could also use vegetable oil or coconut oil) helps make the cookie super moist. I like the complexity that olive oil brings to the final taste!
  • vanilla extract – For the best cookie flavor, add a bit of vanilla extract. It kind of acts as a background flavor that balances really well with all the other flavors.
  • rolled oats – To get a delicious chewy texture, use a mix of rolled oats and flour. You could use quick cooking oats, but I would not use steel cut oats.
  • all-purpose flour – You could also swap with Bob’s 1 to 1 Gluten Free flour if necessary!
  • cinnamon – I personally think cinnamon belongs in banana bread. And it belongs in this cookie too!
  • baking powder – This ingredient is vital to get a bit of rise and puff in the cookie while it’s baking, especially because we are not using any eggs in this recipe.
  • salt – To balance all of the sweet flavors, just add a little pinch of salt.
  • chocolate chips – These are not required but make it even more delicious. You could also swap with raisins for a oatmeal raisin vibe!

How do you make this Air Fryer Banana Oatmeal Cookie?

This air fryer cookie for one comes together so quickly, it’ll feel like you made amazing banana bread in a quarter of the time. If you love using your air fryer to make quick and yummy creations, this recipe is for you!

First, grab a small mixing bowl. I feel like I rarely use small ‘mixing’ bowls, but now is the time! Start by mashing up the half of banana in the bowl with a fork. Then add the wet ingredients: sugar, oil and vanilla. Mix those together well with the fork.

If you don’t know what to do with the other half of your banana, stick it in the freezer! Or make another air fryer cookie for someone else ๐Ÿ™‚

Once it’s well mixed, add the oats, flour, cinnamon, baking powder, and salt. Mix it together until no dry spots remaining. The dough should be thick, but not dry. Add in the chocolate chips and give it a final stir.

Next, cut out a piece of parchment paper to line the inside of the air fryer, making it about 6×6 inches or so. You don’t want too much extra paper in the basket, as it will block air flow, and might curl and get stuck to the top of the cookie.

Put the piece of parchment paper into the air fryer basket, then spoon the cookie dough onto the center of the parchment. Use the back of the spoon to spread the dough into a large circle with an even thickness. Top with a few more chocolate chips if you’d like.

Air fry the cookie at 320F for 8 minutes. It’s done when the edges and top are browning sufficiently. Remove the cookie from the air fryer with a spatula or by lifting at the edges of the parchment paper. Let it cool for 5-10 minutes before enjoying it all to yourself!

Can I use gluten-free flour instead of all-purpose flour?

Sure, I’d recommend Bob’s Red Mill 1 to 1 Flour as the best gluten free alternative flour option.

Best tips for making this cookie in the air fryer:

Here are my best tips for making this Air Fryer Banana Oatmeal Cookie For One:

  • Use an extra ripe banana for easier mashing, better flavor, and more sweetness in the cookie.
  • Try to cut the parchment paper only a little bit bigger than the cookie. If the parchment paper is too big, it will restrict air flow and curl over on top of the cookie.
  • The first time you make the cookie, check it at 6 minutes to make sure it’s cooking at the right speed. Not all air fryers are the same and some cook faster than others.

Can I use foil instead of parchment paper?

While it is perfectly okay to use aluminum foil in the air fryer, I would not recommend using it here. The cookie dough may stick to the foil. Using parchment paper is the best way to guarantee no sticking.

Ingredients

  • 1/2 ripe banana
  • 1 1/2 tablespoons brown sugar, packed
  • 1 tablespoon olive oil
  • 1/4 teaspoon vanilla extract
  • 1/4 cup rolled oats
  • 3 tablespoons all-purpose flour
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon fine sea salt
  • 1 tablespoon chocolate chips (plus more for topping if desired)

Instructions

  1. Mix wet ingredients:ย In a small mixing bowl, mash the banana well with a fork, then add the brown sugar, olive oil, and vanilla. Stir until completely mixed together.
  2. Add dry ingredients: Next, add the rolled oats, flour, cinnamon, baking powder and salt to the bowl and stir until well mixed. The cookie dough should be fairly thick but not dry. Add chocolate chips and mix those in as well.
  3. Air fry it: Cut out a square of parchment paper that fits into your air fryer basket, about 6×6 inches. Do not use foil – the cookie might stick. Place the parchment paper into the air fryer, then scoop the cookie dough onto the center of the parchment paper. Use a spoon to spread the dough out into a large circle with an even thickness. The cookie will puff up a bit as it cooks, but it will not spread. Top with chocolate chips if you’d like. Air fry at 320F for about 8 minutes, or until the edges and top are browning. If your air fryer is already preheated, start with 7 minutes.
  4. Serve and store: Remove the cookie from the air fryer and let it cool for 5-10 minutes, then enjoy! Leftovers (if there are any) can be stored on the counter wrapped up or in an airtight container for up to 3 days.

    This was easy to make and a delicious treat. I doubled the recipe to make 2 cookies. My ninja air fryer/toaster oven took closer to 10 minutes to cook them. Will definitely make again!
