Air Fryer Banana Oatmeal Cookie For One

Ingredients

  • 1/2 ripe banana
  • 1 1/2 tablespoons brown sugar, packed
  • 1 tablespoon olive oil
  • 1/4 teaspoon vanilla extract
  • 1/4 cup rolled oats
  • 3 tablespoons all-purpose flour
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon fine sea salt
  • 1 tablespoon chocolate chips (plus more for topping if desired)

Instructions

  1. Mix wet ingredients: In a small mixing bowl, mash the banana well with a fork, then add the brown sugar, olive oil, and vanilla. Stir until completely mixed together.
  2. Add dry ingredients: Next, add the rolled oats, flour, cinnamon, baking powder and salt to the bowl and stir until well mixed. The cookie dough should be fairly thick but not dry. Add chocolate chips and mix those in as well.
  3. Air fry it: Cut out a square of parchment paper that fits into your air fryer basket, about 6×6 inches. Do not use foil – the cookie might stick. Place the parchment paper into the air fryer, then scoop the cookie dough onto the center of the parchment paper. Use a spoon to spread the dough out into a large circle with an even thickness. The cookie will puff up a bit as it cooks, but it will not spread. Top with chocolate chips if you’d like. Air fry at 320F for about 8 minutes, or until the edges and top are browning. If your air fryer is already preheated, start with 7 minutes.
  4. Serve and store: Remove the cookie from the air fryer and let it cool for 5-10 minutes, then enjoy! Leftovers (if there are any) can be stored on the counter wrapped up or in an airtight container for up to 3 days.
