Microwave Mug French Toast Four Ways

I absolutely love french toast, but for some reason, when I make french toast, I eat WAY TOO MUCH french toast. Ooops.

At last, I have found a solution! It’s called Microwave Mug French Toast, and each serving is only ONE piece of bread (all I really need let’s be real), so you won’t be tempted to eat four pieces of french toast like me! And even better? Four different flavor ideas!! One of them isn’t even chocolate chip, so really I’m giving you five ideas. YOU’RE WELCOME.

What is Microwave Mug French Toast?

Microwave Mug French Toast, or at least my version, is a bread pudding/french toast hybrid that is based with bread and egg, sweetened with maple syrup, and cooked in a mug (or any microwave safe cup) for just over one minute. I especially love how quickly it can be put together, and how extremely delicious it is. Have I mentioned I love french toast? #carbs

But seriously though, that’s why Microwave Mug French Toast was necessary in my life. ONE SERVING of french toast is all I need. But when I pull out the pan, whisk eggs with milk, and basically set up a french toast making operation in my kitchen, I feel the need to cook more than one piece of bread’s worth of french toast. Microwave Mug French Toast keeps me satisfied with only ONE piece of toast, and ZERO pans to clean.

BTW you can also cook the french toast in the mug, then transfer to a plate if you’re not in a hurry or do not like to eat out of coffee mugs 😉

  • These bad boys are the quickest hot breakfast I could possibly whip up in my home. Maybe besides instant oatmeal, but we don’t usually keep that around.
  • Uhm, this might be obvious, but they are DELICIOUS. I love french toast, and a mug of this stuff satisfies all my french toast cravings.
  • You can use up the heel of the bread loaf, and you can’t even tell. In fact, it might even make the final product better and more “french toast” like, if the bread is crustier and sturdier.
  • You can flavor them in SO many ways, and take advantage to use up random ingredients. I’ll reveal the four ways recipes very soon, but I’m talking things like leftover pumpkin, berries, chocolate chips, the tiny last bit of a nut butter jar… basically whatever you want.
  • This recipe is sweetened with only maple syrup, so that means no brown sugar, white sugar, or any processed sugars. Bonus: You can adjust the amount of maple syrup to your sweetness preference.
  • Personally, I love french toast. But I only need one serving at a time, AKA portion control. These are the perfect one-serving breakfast to keep portions under control, but you can also make 4 of them if you have others to feed!
  • Use any whole wheat or healthy bread you prefer! Just be sure to avoid super soft white bread because it may get too soggy. Harder, sturdier breads work great, which is why I like to use 100% Whole Wheat Dave’s Killer Bread.

Okay, now that I’ve explained why these little microwave mug french toasts work, let’s get to the four flavor options! I’m just as excited about them as you (and I’ve already tried them all!).

What do you need to make Microwave Mug French Toast?

All four varieties of Microwave Mug French Toast require the following ingredients:

  • A slice of bread is key – Make sure it’s sturdy. I would avoid plain white bread as it may get too soggy and not cook as well. I like to use whole wheat bread – you can even use the heel.
  • Maple syrup – just one tablespoon of natural sweetener per serving.
  • One egg – because french toast!
  • A hefty dash of cinnamon – I love cinnamon and I always add it to my french toast egg mixture (all the flavors have cinnamon but some have less).
  • A bit of almond milk – you can use any kind of milk you like, but I normally use unsweetened almond milk. I used regular 2% milk for my husband’s and that worked just fine as well.
  • A dribble of vanilla – for ultimate depth of flavor! I have always put vanilla in my french toast.
  • Coconut oil or butter – to keep it from sticking to the sides of the mug.

#1: Classic Maple Cinnamon Microwave Mug French Toast

1/2 teaspoon of cinnamon + 1 tablespoon maple syrup = Classic Maple Cinnamon

Had to include this flavor on the list because it’s a classic, plus the easiest one to concoct when you don’t have any of the ingredients for the other flavors (you could always toss some chocolate chips in there for good measure).

#2: Berries & Cream Microwave Mug French Toast

1 tablespoon cream cheese + 1/4 berries of choice = Berries & Cream

Not sure if this is my first or second favorite flavor on this list, but definitely somewhere in the top 3 (lol). I love the little pockets of cream cheese – they remind me of cream cheese stuffed french toast from restaurants. But this version is at home, and SO yummy. Perfect for using up small amounts of leftover berries.

#3: Pumpkin Spice Microwave Mug French Toast

1 tablespoon pumpkin pureé + 1/4 teaspoon pumpkin pie spice + 1 tablespoon pumpkin seeds (optional) = Pumpkin Spice

So perfect for the current season, but also because I often find myself with small amounts of leftover pumpkin and no way to use it. Well, here’s a way! Just one tablespoon of pumpkin makes this single serving mug french toast happen. You NEED pumpkin spice flavored french toast in your life. That is all.

#4: Peanut Butter Crunch Microwave Mug French Toast

1 tablespoon peanut butter + 2 tablespoons granola = PB Crunch

This will be my go-to once pumpkin season is over and I’m all out of berries. I LOVE PEANUT BUTTER, and if you do too, then this is the flavor choice for you. PB is mixed in with the bread and eggs so it’s basically infused into your french toast. You can even drizzle some on top if you want.

So, which flavor are you going to choose? How about, all of them? Not all at once, but planned out over your next couple weeks of breakfast meals. Keep up the variety and add this super simple single serving breakfast to your meal plan!

Tips for cooking Microwave Mug French Toast:

  • First and foremost, be sure to use a microwave safe mug. You can also use any microwave safe travel cup or mug if you plan on taking these to go.
  • After you mix everything together in your mug, let it sit for 30-60 seconds before cooking. This will give the liquid a chance to soak into the bread (especially if your bread is a heel or extra sturdy).
  • Another option is to cook it in a microwave safe mug and then transfer to a plate or non-microwave safe travel container if you don’t like the whole “eating out of a mug” thing.
  • Don’t skip the oiling the mug part. Egg will stick to you mug if you don’t. Super annoying and hard to get off. Both butter and coconut oil work well.
  • Microwaves are all different, so the first time you cook one of these babies, pay close attention to how it’s cooking. With such a short cook time, a few seconds can make a difference.
  • If you’re finding your french toast mug too wet, another 5-10 seconds in the microwave might help. If it’s too dry, add another tablespoon of milk to your mixture next time.

Classic Maple Cinnamon

  • 1/2 teaspoon coconut oil (to grease the mug)
  • 1 egg
  • 1 tablespoon maple syrup
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons unsweetened almond milk (or milk of choice)
  • 1/2 teaspoon cinnamon
  • tiny pinch of salt
  • 1 slice of whole wheat bread, roughly cut into 1 inch pieces

Berries & Cream

  • 1/2 teaspoon coconut oil (to grease the mug)
  • 1 egg
  • 1 tablespoon maple syrup
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons unsweetened almond milk (or milk of choice)
  • 1/4 teaspoon cinnamon
  • 1 tablespoon cream cheese
  • 1/4 cup berries of choice (if using strawberries, cut into small pieces)
  • tiny pinch of salt
  • 1 slice of whole wheat bread, roughly cut into 1 inch pieces

Pumpkin Spice

  • 1/2 teaspoon coconut oil (to grease the mug)
  • 1 egg
  • 1 tablespoon maple syrup
  • 1/4 teaspoon vanilla extract
  • 1 + 1/2 tablespoons unsweetened almond milk (or milk of choice)
  • 1 tablespoon unsweetened pumpkin pureé
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon pumpkin spice
  • tiny pinch of salt
  • 1 slice of whole wheat bread, roughly cut into 1 inch pieces

PB Crunch

  • 1/2 teaspoon coconut oil (to grease the mug)
  • 1 egg
  • 1 tablespoon maple syrup
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons unsweetened almond milk (or milk of choice)
  • 1 tablespoon peanut butter
  • 1/2 teaspoon cinnamon
  • tiny pinch of salt
  • 1 slice of whole wheat bread, roughly cut into 1 inch pieces
  • 2 tablespoons granola

Instructions

  1. Use coconut oil (or butter) to grease the inside of a microwave safe mug. Crack the egg into the mug and whisk briefly. Add all remaining ingredients to the mug except the bread cubes (for PB crunch, do not add granola until after cooking). Stir until the egg/milk mixture is completely mixed. If adding peanut butter or cream cheese, use your fork to break it up so no large clumps remain.
  2. Add the bread pieces to the mug. Gently stir, making sure to saturate all of the bread pieces but not squish them too much. All the bread should be soaked with the egg mixture. Let it sit for 30-60 seconds before cooking to fully soak up the liquid.
  3. Cook the mug in the microwave on High for 70-90 seconds – I usually check at 70 seconds and stop there. Very little liquid should remain when the french toast is fully cooked.
  4. Serve immediately, top with granola, maple syrup, or just eat as is.

Notes

Cooking note: If your mug french toast begins to rise in your mug towards the end of cooking, this is because steam is building up under the food. Since the french toast is not sticking to the sides of the mug, it can easily rise up and look like it is about to overflow. This does not necessarily mean the french toast is done cooking, so be sure to check it. It may need 10-15 more seconds, done in 5 second intervals.

Cooking note: If you are not in a huge hurry, toasting the slice of bread briefly before using it in the recipe can help it hold up a little better.
