Microwave Mug French Toast Four Ways

A super quick, hot and delicious french toast breakfast is just what your mornings need! Sweetened with maple syrup, and made using a slice of whole wheat bread. Plus, Microwave Mug French Toast comes in FOUR flavors – the perfect way to add some variety to your breakfast line up!

Ingredients

Classic Maple Cinnamon

  • 1/2 teaspoon coconut oil (to grease the mug)
  • 1 egg
  • 1 tablespoon maple syrup
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons unsweetened almond milk (or milk of choice)
  • 1/2 teaspoon cinnamon
  • tiny pinch of salt
  • 1 slice of whole wheat bread, roughly cut into 1 inch pieces

Berries & Cream

  • 1/2 teaspoon coconut oil (to grease the mug)
  • 1 egg
  • 1 tablespoon maple syrup
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons unsweetened almond milk (or milk of choice)
  • 1/4 teaspoon cinnamon
  • 1 tablespoon cream cheese
  • 1/4 cup berries of choice (if using strawberries, cut into small pieces)
  • tiny pinch of salt
  • 1 slice of whole wheat bread, roughly cut into 1 inch pieces

Pumpkin Spice

  • 1/2 teaspoon coconut oil (to grease the mug)
  • 1 egg
  • 1 tablespoon maple syrup
  • 1/4 teaspoon vanilla extract
  • 1 + 1/2 tablespoons unsweetened almond milk (or milk of choice)
  • 1 tablespoon unsweetened pumpkin pureรฉ
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon pumpkin spice
  • tiny pinch of salt
  • 1 slice of whole wheat bread, roughly cut into 1 inch pieces

PB Crunch

  • 1/2 teaspoon coconut oil (to grease the mug)
  • 1 egg
  • 1 tablespoon maple syrup
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons unsweetened almond milk (or milk of choice)
  • 1 tablespoon peanut butter
  • 1/2 teaspoon cinnamon
  • tiny pinch of salt
  • 1 slice of whole wheat bread, roughly cut into 1 inch pieces
  • 2 tablespoons granola

Instructions

  1. Use coconut oil (or butter) to grease the inside of a microwave safe mug. Crack the egg into the mug and whisk briefly. Add all remaining ingredients to the mug except the bread cubes (for PB crunch, do not add granola until after cooking). Stir until the egg/milk mixture is completely mixed. If adding peanut butter or cream cheese, use your fork to break it up so no large clumps remain.
  2. Add the bread pieces to the mug. Gently stir, making sure to saturate all of the bread pieces but not squish them too much. All the bread should be soaked with the egg mixture. Let it sit for 30-60 seconds before cooking to fully soak up the liquid.
  3. Cook the mug in the microwave on High for 70-90 seconds – I usually check at 70 seconds and stop there. Very little liquid should remain when the french toast is fully cooked.
  4. Serve immediately, top with granola, maple syrup, or just eat as is.

Notes

Cooking note: If your mug french toast begins to rise in your mug towards the end of cooking, this is because steam is building up under the food. Since the french toast is not sticking to the sides of the mug, it can easily rise up and look like it is about to overflow. This does not necessarily mean the french toast is done cooking, so be sure to check it. It may need 10-15 more seconds, done in 5 second intervals.

Cooking note: If you are not in a huge hurry, toasting the slice of bread briefly before using it in the recipe can help it hold up a little better.
