I have an irrational fear that someone will get upset I’m posting smoothies in Fall and Winter… please, I mean the best! I’ve been super curious about a cranberry smoothie lately, so I made it happen. Cranberries are totally in season right now, so you’re going to have to let this one slide. I’m on a never-ending quest for healthy casseroles. We truly love casseroles around here. But often, the ones I find online have pasta, rice, bread, or cream. I love (LOVE) all of these things, but anytime I can replace them and still be totally into the dish is a winner. The other day, I ate this casserole for lunch AND dinner. Then I realized I had probably eaten like half a head of broccoli that day (plus spinach and cauliflower whattt). Has that happened ever? I don’t think so, but I love it. We got back from vacation, and Trader Joe’s had a thousand new items. Everywhere. I was blown away. On the shelves. At the end of every aisle. The register shelves (you know the ones). Even outside the front door. The TJ’s crew agrees with me. And they love my Hufflepuff sweater. One chick walked up and laid it all out there – “Hey, I like your sweater.” Thanks, lady. You and the crew rock. You know what else rocks? Pesto + chicken. It’s kind of our thing. But this time, I removed some carbs and shoved the pesto chicken inside spaghetti squash I found at TJs.
