Zucchini Chicken “Lo Mein”

We try to avoid pasta around here. When we do give in, it’s usually for brown rice pasta and quinoa noodles. But this recipe almost makes me believe I’ll never cook with pasta again. You’ll see what I mean when you try out the Zucchini Chicken “Lo Mein”. The “secret” to this zucchini chicken lo mein is spiralized zucchini. The zucchini noodles camouflage themselves so well with the spices, chicken, and vegetables that it actually does seem like you’re eating pasta.

Feta Basil Turkey Burgers

To aid our constant effort to cook in bulk (yay leftovers!), we buy most of our meat at Costco. This includes ground turkey meat, which I substitute for ground beef always. The meat we buy come in packs of four, each about 1.25-1.5 pounds of ground turkey, and I am always on the hunt for ways to use one entire package in a single recipe.
